Most Americans do not eat enough veggies.
The problem with this? They’re an extremely vital food we need every single day! They offer so many health benefits because of their nutrient content.
Whether you’re a nutrition expert or not, we all know we should be eating more vegetables! But, often times we come up with excuses as to why we don’t eat enough: not enough time, veggie preference, lack of ideas, etc. etc. etc…
We choose certain foods for the taste and sensory aspect, but how many of us choose foods because of what they do for our health? We have to start thinking of food as fuel and how to make healthy choices for our bodies!
I know veggies aren’t the most beloved foods; they can taste bland and bitter.
So I have come up with these 4 ways for you to incorporate more veggies into your every day diet!
Turn vegetables into noodles: Turning zucchini into noodles is a great way to make a healthier spaghetti and meatballs dish! You can boil them for 2-3 minutes so they have that “al dente” bite just like spaghetti does. Add sauce and homemade meatballs!
Sneak them into your smoothies: This is a great way to get a meal packed with all the nutrients veggies have to offer! My favorite smoothie: Handful of spinach or kale, 1/2 mango, 1 banana, 1 C almond milk, 1 scoop vanilla protein powder, ice.
Roast them in the oven: Roasting veggies is the best way to make them taste great! Drizzling them with olive oil and sea salt will make you want to eat a ton of veggies, I promise!
Make a veggie based soup: Puree the veggies and add your favorite spices, chicken, lentils, beans, and other chopped up veggies!
